Aar Tangra (also known simply as Aar, Aor, or giant river catfish / Sperata aor) is a popular freshwater catfish in Bengali and Eastern Indian cuisine.

  • Texture & Flavor: It has a medium-firm, flaky texture with a mild, slightly sweet taste. Like Boal, it is moderately fatty and very flavorful.

  • Bones: It features a single central bone with minimal fine intramuscular bones, making it easy and convenient to eat.

  • Culinary Use: Best known for rich preparations such as Aar Macher Kalia or Jhal cooked with mustard oil, tomatoes, ginger, and warm spices.

  • Cooking Note: Because it is a scaleless catfish, it can splatter in hot oil; marinating with a little oil or keeping the pan partially covered while frying is recommended.
