Chiti Kakra (চিতি কাঁকড়া), commonly referring to indigenous smaller swimming and marsh crabs such as the Oceanic Paddler / Peregrine Crab (Varuna litterata) or freshwater river crabs, is a well-loved traditional crab variety in rural Bengal and coastal wetlands.

  • Appearance & Size: Noticeably smaller and flatter than giant mud crabs, featuring a rounded-quadrangular, brownish or mottled carapace with flattened, paddle-like legs suited for swimming.

  • Texture & Flavor: Intensely sweet and rich in concentrated crab flavor. Because the shell is relatively thinner and softer, it imparts a deep seafood sweetness directly into the gravy during cooking.

  • Habitat: Brackish estuaries, tidal canals, paddy fields, and freshwater rivers connecting to coastal deltas across Bengal.

  • Everyday Culinary Favorites:

    • Chiti Kakrar Kasha / Jhal: A spicy, rustic village-style dry curry cooked with sliced onions, ginger-garlic paste, halved potatoes, and a blend of cumin, coriander, and chili.

    • Chiti Kakrar Tok: A traditional sweet-and-tangy summer delicacy where the small crabs are simmered in a light tamarind (tetul) or raw mango broth tempered with mustard seeds.

    • Chiti Kakra Bhaja: Shallow-fried crisp with turmeric, salt, and red chili powder, often relished whole or paired with warm dal and rice.

  • Cleaning & Cooking Tip: Since these crabs are smaller, they are typically cleaned by removing the top shell, trimming the gills, and cracking the tiny body in halves—cooking them whole with the shell intact so all the savory juices (ghilu) melt into the curry.
