Koi Mach (Anabas testudineus), widely known in English as the Climbing Perch, is an indigenous freshwater live-fish (jiol mach) cherished across Bengal, Assam, and Southeast Asia.

• Traits & Survival: A sturdy, scaled freshwater fish equipped with an accessory breathing labyrinth organ, allowing it to take in atmospheric oxygen and stay alive out of water for hours.

• Texture & Flavor: It has sweet, firm, highly flavorful meat with a tender, juicy flake when cooked.

• Bones: Unlike catfish, Koi has scales and fine pin-bones alongside the central vertebral column, requiring slightly more mindful eating.
