Lote Mach (লোটে মাছ), widely known as Bombay Duck (Harpadon nehereus), is a popular marine and estuarine fish prized across coastal Bengal and western India for its unique texture and rich flavor.
  • Appearance & Texture: Slender, translucent grayish-white body with a wide mouth and tiny sharp teeth. The meat is exceptionally soft, delicate, and holds a very high water content, almost melting when cooked.
  • Bones: It features a single, extremely soft, gelatinous central spine that softens completely during cooking, making the entire fish easily edible without tedious deboning.
  • Habitat: Marine and estuarine waters; abundant along the shallow coastal waters of the northern Bay of Bengal and the Arabian Sea.
  • Culinary Highlights:
    • Lote Macher Jhuri / Bhorta: The most iconic preparation, where the fish is slow-cooked and shredded until the moisture evaporates, creating a dry, spicy mash infused with onions, garlic, green chilies, and mustard oil.
    • Crispy Fry: Coated in a seasoned batter of chickpea flour (besan) or cornstarch and deep-fried until crunchy outside and cloud-soft inside.
    • Lote Macher Jhal: A rich, semi-dry curry cooked with onions, tomatoes, and robust spices, handled gently to keep the fish pieces intact.
  • Cooking Tip: Do not add water while cooking fresh Lote mach; it naturally releases a significant volume of liquid, which must be evaporated over medium-high heat for dry preparations.
