Topse Mach (also known as Topshe or Mango Fish, scientifically Polynemus paradiseus), is a prized delicacy in Bengali cuisine found in coastal and estuarine waters.

• Appearance & Traits: A small, delicate fish with golden-yellow undertones and long, thread-like filament rays trailing near the pectoral fins (giving it the English name Paradise Threadfin).

• Texture & Flavor: Extremely soft, sweet, and melt-in-the-mouth flesh with a delicate, buttery richness.

• Bones: It has a very soft, flexible central backbone and practically no stubborn pin-bones, making it a favorite for frying whole.

• Culinary Classic: Famous across Bengal for Topse Fry—marinated in ginger-garlic and green chili paste, coated in a seasoned batter (or breadcrumbs), and deep-fried until crisp and golden. It is also cooked in light mustard or cumin-based gravies.
