Gule Mach (গুলে মাছ), also known as Balia or Bele in various regions (scientifically Pseudapocryptes elongatus or from the Gobiidae/Oxudercidae family), is a slender, elongated mudskipper-goby fish found in coastal deltas and brackish estuaries across Bengal.
-
Appearance & Traits: Slender, cylindrical body with smooth, slippery skin and a pale grey-to-olive sheen. Like mudskippers, it has protruding eyes on top of its head and can survive out of water for extended periods in moist mud.
-
Texture & Flavor: Exceptionally soft, tender, and naturally sweet flesh that melts quickly when cooked.
-
Bones: It features a single, soft central spine with minimal troublesome pin-bones, making it very easy to eat.
-
Everyday Culinary Use:
-
Gule Macher Tel Jhal: Cooked in pungent mustard oil tempered with kalo jeere (nigella seeds), slit green chilies, and a freshly ground mustard-poppy paste.
-
Jhol: Prepared with cubed potatoes and pointed gourd (potol) or ridge gourd (jhinge) in a light cumin-ginger broth.
-
Chorchori: Gently tossed with seasonal vegetables and fresh coriander leaves.
-
-
Cooking Tip: The meat is delicate—fry it lightly on medium heat so it stays juicy without crumbling or turning dry.
